Apricot Shrub

1 cup divided Apple Cider Vinegar
5 Fresh Apricots
1 orange Orange Peel
3 cups Ginger Ale

Pit and slice apricots and put in ½ cup of Apple Cider Vinegar. Peel the orange and put the peel in ½ cup Apple Cider Vinegar. Place in refrigerator for 3 days. Puree the apricot mixture and combine with orange peel mixture. Add the ginger ale and serve ice cold.
